1 250g pack - Giovanni Rana Italian Cured Ham & Cheese Tortelloni
½ container (90g) - fresh Giovanni Rana Parmigiano Reggiano sauce
4 - artichokes
1 tablespoon - extra virgin olive oil
2 slices - Italian prosciutto
1 bunch - rocket
½ - lemon

ITALIAN CURED HAM & CHEESE TORTELLONI WITH ARTICHOKE & PARGMIGIANO REGGIANO SAUCE

Cut off the stems of the artichokes. With a knife, carve around the leaves to cut out the hearts. Remove the fibres. Cut the hearts in half and sprinkle them with lemon juice. Heat oil in a large pan; once hot, add the artichoke hearts and sauté them for five minutes over high heat. Set aside. In a second non-stick pan, dry roast the prosciutto. Plunge the tortelloni into a saucepan and simmer for 1 minute . Drain with a slotted spoon and pour into the pan with the artichokes. Add the prosciutto, cut into strips. Season with pepper. Sauté for one minute. Heat up the fresh sauce according to the instructions on the package. Divide onto two plates. Add the rocket. Adjust the seasoning. Mix. Dress with a few spoonfuls of sauce and serve immediately.
