The craft workshop

Tortellini were produced only to order: the filling was prepared on Thursdays, whilst the whole product was made on Fridays and Saturdays to be delivered on Sundays. It was Giovanni Rana himself who carried out also this final stage, first on a moped and then in a Renault 4. Everything went on like that until 1965, when he asked his sister and four friends to deliver the products because the demand for them was on a steady increase.

To each of them Giovanni assigned a specific geographic area in the neighbourhood of Verona, Vicenza, Padua and Rovigo.

 

Tortellini were made by hand until 1968, when the first piece of machinery , projected and then perfected by himself, was introduced in the workshop. Thus the production capacity raised from 50/60 kg a week to 10kg an hour.
